Ingredients for 4 servings

1 x a whole chicken - 3.5 lbs, 1.8kg, preferably organic

Kosher Salt

4 x fresh ginger section, in 1/4” slices

2 x green onion stalks, cut into 1″ sections - both the green and white parts

1 tsp Sesame Oil

2 tbsp vegetable oil

3 x FOR THE RICE: garlic cloves, finely minced

1 x ginger section, finely minced

2 cup long-grain uncooked rice, washed and soaked in cool water for 10 min or longer

2 cup reserved chicken poaching broth

1/2 tsp sesame oil

1 tsp kosher salt

1 tbsp FOR THE CHILI SAUCE: lime juice

2 tbsp reserved chicken poaching broth

2 tsp sugar

4 tbsp sriracha chili sauce

4 x garlic cloves

1 x ginger

a generous pinch of salt, to taste

1/4 cup dark soy sauce

Few sprigs cilantro

1 g cucumber, thinly sliced or cut into bite-sized chunks
