Fast Collard Greens

If you like collards, this is a very fast way of cooking them. You only need a little stock. For an Asian flavor I tried sesame, mustard and a good dash of sesame oil - great!

Ingredients for 4 servings

1 bunch collard greens

1-2 tablespoons peanut oil

2 tablespoons black mustard seeds

1 teaspoon sesame or caraway seeds

1/2 teaspoon salt

3 tablespoons chicken or vegetable stock

Pepper (lots)



Remove central veins from collards and discard. Roll 10-12 of the half-leaves into a cigar and chiffonade (or slice finely) Add peanut oil to large stir fry pan on medium high When the oil is shimmering add sesame/carraway seeds and mustard seeds. The seeds will pop. Quickly add cabbage so the mustard pops into the cabbage then turn greens with tongs to sear and coat with oil Add a little salt to pan Add a few tablespoons of chicken stock and cover while simmering for 10-15 mintues Add pepper and serve
