1/2 pound gailan (Chinese broccoli)

-- Vegetable oil as needed

1/4 teaspoon kosher salt

1 shallot, minced

1 clove garlic, minced

1/4 to 1/2 pound flank steak or 1/2 pound chicken thigh or breast meat, cut into 1/8- to 1/4-inch thick slices

1 tablespoon light soy sauce (see Note)1 teaspoon fish sauce + more to taste

1/2 to 1 cup unsalted chicken stock or water

-- Pinch of sugar, as necessary

-- Sriracha or other hot sauce, as condiment
