Ingredients for 4 servings

4 pork rib chops, 1 1/2" thick

For the brine:

1 quart of cold water

2 tablespoons kosher salt

2 tablespoons molasses

For the rub:

1 tablespoon paprika

1 teaspoon chili powder

1 teaspoon granulated garlic

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon cayenne pepper

1/2 teaspoon sugar

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

For the salsa:

4 ears of corn, husked

4 plum tomatoes, cored, seeded, and diced

1 medium red onion, diced

1 small jalapeƱo, seeded and diced

3 heaping tablespoons of finely chopped cilantro

3 cloves of garlic, minced

Juice from 1 lime

Kosher salt

Freshly ground black pepper
