Ingredients for 7 servings

1 cup quinoa

1 cup gluten-free breadcrumbs

1 cup chopped spinach

4 green onions

1/2 cup parmesan cheese

4 cage-free eggs

3 cloves minced garlic

1 tsp coconut oil

as needed coconut oil spray

dash himalayan salt

dash parsley

dash basil

2 cups water

Preparation

1. Rinse quinoa and put in water in a medium sauce pan 2. Bring quinoa to a boil then to a simmer for 15-20 minutes or until quinoa has absorbed all the water 3. let quinoa cool 4. While cooking quinoa mix eggs, parmesan cheese, green onions, bread crumbs, garlic, parsley, basil, salt, spinach, and coconut oil in a large bowl. 5. Once quinoa is done and cooled, add to mixture. 6. spray coconut oil on not-stick pan and and bring to medium-high heat. 7. form mixture into patties and fry for 10 minutes (make sure to watch and flip patties) 8. Serves 7-10
