Ingredients for 4 servings

6-8 medium-size poblano peppers

1 cup cooked brown rice

1/2 cup corn kernels, fresh or frozen

1/2 cup raw yellow onion

1/2 cup diced bell pepper

3 x roma tomatoes, seeds removed, diced

1 can black beans, drained

1/4 tsp cumin

salt and pepper to taste

1/2 cup shredded cheddar cheese, plus 2 tbsp to sprinkle on top
