  • 2 bunches medium beets, (about 1 1/2 lbs) tops trimmed
  • 1/2 cup walnuts
  • Kosher salt and freshly ground black pepper
  • 2 Tbsps red wine vinegar
  • 4 ozs goat cheese, (preferably aged goat cheese) crumbled
  • 1/3 cup extra-virgin olive oil
  • 1/2 medium head escarole, torn
