Absolutely delicious. I didn't use Emeril's seasoning. Just added a TBL of Zatarain's Creole Seasoning. Also added fresh rosemary from the garden. People raved. The ultimate comfort food.

Ingredients for 6 servings

1 cup diced celery

2 tablespoons chopped fresh sage leaves

1 tablespoon Essence, recipe follows

2 cups diced onions

2 teaspoons freshly ground black pepper

1/2 pound dried white navy beans

1 (14 1/2-ounce) can diced tomatoes

8 cups chicken stock

1/4 cup all-purpose flour

1/4 cup chopped fresh parsley leaves

1 tablespoon kosher salt

4 sprigs fresh thyme

2 tablespoons minced garlic

3 pounds country-style pork ribs

Steamed white rice, for serving

1/4 cup olive oil

2 bay leaves

1 cup diced green bell pepper
