2 tablespoons unsalted butter , melted

2 tablespoons light corn syrup

1/4 cup creme fraiche

1/4 cup water

3 large egg yolks, at room temperature

1 pinch cream of tartar (less than 1/8 teaspoon)

Caramel Sauce

1 cup sugar

1/4 cup sugar

1/2 teaspoon fresh lemon juice

9 large egg whites, at room temperature

1/2 cup heavy cream , warmed to 100 degrees F

1 pinch salt (less than 1/8 teaspoon)
