Ingredients for 4 servings

1 lemon , grated zest

good pinch saffron strands

2.0 tbsp olive oil

450.0ml fish stock (made with the bones or use a good-quality ready made stock)

1 fennel bulb

½ tsp fennel seeds , crushed

250.0g cherry tomatoes , halved

4 star anise

1 lime , grated zest

about 150.0ml olive oil

1 cinnamon stick

2 cardamom pods , crushed

2 fat garlic cloves

100.0ml balsamic vinegar

2 large banana shallots or 4 smaller ones

1 bay leaf

2 carrots

3 cardamom pods

½ tsp coriander seeds , crushed

150.0ml dry white wine

4 red mullet about 300g each, ungutted, scaled (see step by step)

1 onion , sliced

large handful fresh coriander , roughly chopped

1.0 tsp fenugreek seeds , crushed

1 orange , grated zest

250.0g basmati rice
