Ingredients

2 pounds fresh greens (spinach, kale, mustard greens, chard), washed and thick stems removed

1/4 cup ghee

1/2 pound paneer, cubed

2 yellow onions, grated or finely chopped

3 garlic cloves, minced

1 tablespoon freshly grated ginger

2 teaspoons garam masala

1/2 cup buttermilk

1/2 cup plain yogurt

Salt

1 gallon (16 cups) whole milk

7-8 tablespoons lemon juice or white vinegar

2 tablespoons coriander seeds

1 tablespoon cumin seeds

1 teaspoon fennel seeds

1/2 teaspoon whole cloves

1/2 teaspoon mustard seeds

1 tablespoon cardamom seeds

1 tablespoon whole black peppercorns

2 dried red chiles, broken in pieces, seeds discarded

1 tablespoon turmeric
