3 medium yellow onions , halved and cut into 1/4-inch-thick slices

1/2 teaspoon sea salt

1/4 teaspoon freshly ground pepper

1/2 cup crumbled goat cheese

2 tablespoons coarsely chopped fresh rosemary (or 1 tablespoon dried)

Extra-virgin olive oil , for drizzling
