1/2 teaspoon salt

1/2 cup honey

2 tablespoons water

1/2 teaspoon ground nutmeg

1 1/2 cups mixed unsalted pecans, almonds, and walnuts

3 tablespoons granulated sugar, preferably Demerara*

1/2 cup unseasoned rice vinegar

1 cup cranberry juice cocktail

1/2 cup dried cranberries or 1/4 cup dried cranberries and 1/4 cup dried cherries

4 large blood oranges, peel, pith and seeds removed (if blood oranges are not available, may use any seedless variety)

2 pink grapefruit

1 tablespoon granulated sugar, preferably Demerara*

2 bunches baby spinach or watercress
