For the Plum-Ginger glaze

1/4 cup hoisin sauce

1 tablespoon black mustard seeds

1 tablespoon ground red pepper flakes

3 tablespoons powdered ginger

1 cup plum juice

8 ripe purple plums , pitted and coarsely chopped

1 tablespoon whole coriander seed

green onion , thinly sliced

2 tablespoons ground ginger

1/4 cup coarsely chopped fresh ginger

1 tablespoon whole black peppercorn

olive oil , for rubbing

2 star anise

1 tablespoon ground allspice

For the Asian Rub

1 1/2 tablespoons ground black pepper

For the ribs

3 garlic cloves , finely chopped

2 tablespoons ground star anise

1/2 cup spanish paprika

1 tablespoon kosher salt

3 tablespoons finely chopped fresh ginger

2 cups soy sauce

2 tablespoons soy sauce

2 (1 1/2 lb) racks st. louis country-style pork ribs

2 tablespoons dry mustard

1 teaspoon ground cinnamon

1 cup water

4 cups water

2 tablespoons good quality curry powder

2 Thai chiles, seeded and finely chopped

1/4 cup light brown sugar
