  • 3 large egg yolks*
  • 5 ozs hazelnuts, lightly toasted and cooled
  • 3 1/2 cups water
  • 1/4 cup dark rum
  • 1 Tbsp dark corn syrup
  • Vegetable spray
  • 2 Tbsps warm water
  • 1 cup sugar
  • 2 Tbsps confectioners' sugar
  • 4 Tbsps granulated sugar
  • 2 Tbsps sweet Marsala wine
  • 1/4 tsp pure vanilla extract
  • 1 cup heavy cream, whipped
  • 4 ozs unsweetened chocolate, chopped
  • 2 cups chopped dried apricots
  • 4 Tbsps unsalted butter
  • 2 Tbsps hazelnut liqueur (recommended: Frangelico)
  • 3/4 tsp pure vanilla extract
  • 1/2 cup sugar
  • 2 Tbsps fresh lemon juice
  • 3 Tbsps dark corn syrup
