Ingredients for 4 servings

2 lemons

6 cups water

1/2 teaspoon salt, plus more for seasoning

4 salmon fillets, about 6 ounces each (skinless or skin on)

2 tablespoons sherry vinegar

2 tablespoons olive oil

2 teaspoons honey (substitute 1 teaspoon plus more to taste granulated sugar if feeding a child under 12-months-old)

Freshly ground pepper

1 1/2 long English cucumbers, thinly sliced

1 small red onion, very thinly sliced

1 large bulb fennel, washed, trimmed and thinly sliced

2 tablespoon small capers, rinsed and drained
