50 g of spelt (dry weight)

1 medium sized leek, cut into thin slices

1 carrot, peeled and cut into 1 cm cubes

500 ml chicken stock

1 bay leaf

Black pepper

A handful leftover roast chicken (optional)

90 g breadcrumbs (about a cup)

2 heaped tbsp half-fat crème fraiche

2 heaped tbsp grated parmesan

1 medium egg

zest of one lemon

1 heaped tsp finely chopped rosemary needles
