Ingredients for 4 servings

1/2 cup provolone cheese, 1/2" dice

salami, 1/2" dice or julienned

1 cup jarred artichoke hearts, quartered (about 1 jar)

1 roasted red pepper, sliced 2" x 1/2"

1/2 cup ceringola olives, pitted and sliced

1 celery heart, thinly sliced

1 large red onion, thinly sliced

2 roma tomatoes, 1/2 dice

1 head romaine, chopped (iceberg and bibb lettuces are good substitutes)

1/4 cup extra virgin olive oil

1/2 teaspoon dried oregano

1/2 teaspoon dried thyme

1 teaspoon sugar

salt, to taste

fresh cracked black pepper, to taste

parsley, chopped
