1/3 cup extra virgin olive oil

1/2 red onion (diced small)

1 english cucumber (peeled and chopped)

2 cups penne pasta (cooked and drained)

1/2 cup pepperoncini pepper (sliced)

1/2 teaspoon grated lemon peel

salt and pepper

Ror the dressing

2 teaspoons dijon mustard

1/2 cup feta cheese (crumbled)

6 kalamata olives (pitted and chopped)

1/2 cup fresh parsley (chopped)

1/2 teaspoon dried oregano

For the salad

2 plum tomatoes (diced)
