2 1/2 tablespoons tapioca

The topping:

3/4 cup unbleached all-purpose flour

3 tablespoons light or dark brown sugar

2 tablespoons granulated sugar

1/4 teaspoon ground cinnamon

-- Pinch salt

6 tablespoons unsalted butter, cool but not cold, in tablespoons

1/3 cup rolled oats

1/2 cup coarsely chopped toasted walnuts
