1/2 cup shredded or cubed cheese

1/4 to 1/2 cup dried currants or cranberries

optional additions: sunflower seeds, pumpkin seeds, leftover pasta, cooked corn or beans, hard-boiled eggs, leftover veggies

1/4 cup good-quality Balsamic vinegar

3/4 cup extra-virgin olive oil

1/2 tbsp Dijon-style mustard, or to taste

1/4 tsp salt

freshly ground black pepper

1 x clove of garlic, mashed

honey (optional)
