Salt and pepper to taste

1/2 cup finely chopped chives

1/3 cup finely chopped red onions


2 tomatoes, chopped, or 1 cup cherry or grape tomatoes, halved

3 tablespoons olive oil, divided

1/4 cup finely chopped mint

1/2 cup finely chopped red onion

1 cucumber, peeled, seeded and chopped

1 tablespoon lemon juice

Juice and zest of 1 orange

1 1/2 cups chopped flat-leaf parsley

3 tablespoons olive oil, plus more for oiling grill (if needed)
