1/2 pound fresh ricotta

1/4 pound scamorza cheese, cut inot 1/4 in dice

3 egg yolks

1 Tb fresh chopped mint leaves

1/4 pound prosciutto, in a single thick slice , cut into 1/8th in dice

Salt and pepper to taste

4 cups extra virgin olive oil for frying
