Ingredients for 4 servings

1/2 pound ground pork

3 tablespoons finely chopped scallions

1 teaspoon grated fresh ginger

1 clove garlic, minced

1 tablespoon soy sauce

2 teaspoons rice wine vinegar

1/2 teaspoon Chinese five spice powder (Star anise, cloves, cinnamon, fennel, and pepper)

1 egg yolk

24 round dumpling or Gyoza wrappers, plus a few extra in case of tearing (1 package has at least 30)

Water for brushing wrappers

2 tablespoons vegetable oil

1/3 cup chicken stock

Hoisin BBQ Dipping Sauce, recipe, follows

1/4 cup hoisin sauce

1 tablespoon rice wine vinegar

1 teaspoon soy sauce

1/2 teaspoon sesame oil

2 teaspoons finely chopped peanuts
