Ingredients for 4 servings

3 large red chillies , deseeded and stalks removed, chopped

2 lemon grass stalks, trimmed and chopped

1.0 tbsp Thai fish sauce (nam pla)

small bunch coriander , roughly chopped, to serve

6 shallots , finely chopped

2-3 aubergines (about 600g/1lb 5oz), quartered lengthways, then halved

2.0 tbsp ground turmeric

6 garlic cloves , roughly chopped

400.0ml can coconut milk

1.0 tbsp olive oil

1.0 tbsp sugar

knob of fresh ginger , peeled and chopped

400.0ml vegetable stock or water

1.0 tsp chilli powder
