I only used 1 jalapeño and I had to add quite a bit of salt because my tomatoes were unsalted. If I hadn't added beans, it probably wouldn't have gotten the thumbs-up from the kids.

I'm going to add black or pinto beans here. This recipe looks pretty versatile.

2 teaspoons vegetable oil

2 cups thinly sliced onion, divided

3 garlic cloves, finely chopped

1/2 teaspoon salt

2 (8-ounce) packages button mushrooms, sliced

2 jalapeño peppers, seeded and chopped

4 cups finely chopped Swiss chard (1 bunch)

1/4 cup chopped fresh parsley, divided

1/4 cup water

1 (14.5-ounce) can diced tomatoes, undrained

12 (6-inch) corn tortillas, quartered

1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese

1/4 cup low-fat sour cream
