3 stalks lemongrass

1 to 2 inches galangal (frozen is OK), thinly sliced (see "Where to buy")

1/2 small bunch cilantro

3 to 4 kaffir (magrut) lime leaves, if available

12 medium shrimp in shell

2 or more fresh green chiles, such as serrano, halved lengthwise

1/2 pound freshly grated coconut or frozen unsweetened grated coconut, thawed

1/2 pound Chinese egg noodles or fresh linguine

2 tablespoons Thai roasted chile paste in soybean oil (nam prik pow), available at ethnic markets

1 bunch green onions, white and pale green parts only, thinly sliced

2 to 3 tablespoons Thai or Vietnamese fish sauce

1 lime
