Ingredients for 6 servings

100 g quinoa

1 tsp turmeric

100 g cooked and drained chickpeas

100 g cooked and drained haricot beans

2 tbs sliced pitted green olives

1 tsp sumac

1 red pepper, finely diced

2 tbs chopped parsley

3 spring onions, sliced

2 sticks of celery, finely diced

1 carrot shredded or coarsely grated

1 green chilli, de-seeded and sliced

Salt and freshly cracked black pepper to taste

1 tbs sweet chilli sauce

1 tsp Dijon mustard

25 ml extra virgin olive oil

1 tbs tahinin paste

Pinch of caster sugar

1 clove of garlic, crushed

Juice of ½ lemon
