2 to 3 medium peaches (about 1/2 pound)

3 tablespoons extra virgin olive oil

2 tablespoons blood orange vinegar

1 tablespoon granulated sugar

Salt, to taste

1/2 pound goat cheese, softened to room temperature

1 tablespoon freshly chopped mint

1 tablespoon freshly chopped basil

Salt and freshly ground black pepper, to taste

16 1/2-inch thick slices of brioche

1 stick unsalted butter
