  • 6.0 tbsp olive oil
  • 180 g bag baby leaf spinach
  • 2 x 150g balls mozzarella , drained and torn
  • 450.0g new potatoes , halved
  • handful of fresh basil
  • 1.0 tbsp wholegrain mustard
  • juice of ½ lemon
  • 200 g tub roasted peppers in olive oil, drained and torn
