2 boxes whole grain spaghetti (I used one made with spelt flour)

parmesan reggiano

pinch of sea salt

2 tablespoons extra virgin olive oil

1 Spanish onion, finely diced

4 garlic cloves, peeled and thinly sliced

3 tablespoons fresh thyme, chopped, or 1 tablespoon dried thyme

1/2 medium carrot, finely shredded

2 28 ounce cans peeled whole tomatoes

1 teaspoon fresh oregono

1 teaspoon fresh thyme

1 bay leaf

2 tablespoons fresh basil, julienned

salt and pepper
