  • 1 onion , diced
  • 2 sprigs fresh parsley , chopped
  • 1 Tbsp extra virgin olive oil
  • Pasta
  • 1/2 cup port wine (optional)
  • 1 stalk celery , finely minced
  • 4 fresh basil leaves , chopped
  • 56 ozs crushed tomatoes
  • 3 garlic cloves , minced
  • 1/2 Tbsp garlic powder
  • 16 ozs fresh mushrooms , sliced
  • 1/4 tsp salt
  • 14 ozs prepared roasted red peppers, rinsed and pureed
  • Sauce ingredients
  • 1/4 Tbsp dried parsley
  • 1/4 Tbsp dried marjoram
