Ingredients for 2 servings

400-500 gr fish fillet (red snapper preferably)

250-300gr fennel bulb, cut in thin slices

150-170gr (about 2-3) spring onions, finely chopped

1-2 garlic cloves, crushed

80-100gr rice noodles, broken in half

125 ml (1/2 cup) olive oil

1 lt vegetable broth

1 lemon (the juice)

1/2 teaspoon Fleur de Sel (preferably), or other salt
