3/4 tsp dijon-style mustard

3/4 tsp grainy mustard

4 tbsp Walnut Oil

2 tbsp Olive Oil

Kosher salt and freshly ground black pepper, to taste

6 slices FOR THE SALAD --- Bacon

1 x Fennel Bulb, trimmed and cut into wedges, fennel fronds reserved

2 tbsp Brown Sugar

1/2 tsp Cayenne Pepper

1 tbsp Olive Oil

1 x Kosher salt and freshly ground black pepper

a handful of yellow wax x beans, trimmed and blanched

a handful of green beans, trimmed and blanched

a couple handfuls of baby spinach leaves
