2 tablespoons chopped fresh cilantro

2 tablespoons lemon juice

1/2 cup nonfat plain yogurt

3 scallions, sliced, greens and whites separated

3/4 teaspoon salt, divided

1 cup whole-wheat couscous

1/4 cup chopped dried apricots

1 1/4 cups water

1 pound salmon fillet, preferably wild Pacific, skinned (see Note) and cut into 4 portions

1 tablespoon minced fresh ginger

1/2 teaspoon ground cumin

1 tablespoon extra-virgin olive oil

2 tablespoons chopped toasted cashews (see Note)
