It was delicious over crostini and I used it on top of grilled salmon with a squeeze of lemon over the top! It was soooo good!

2 roasted red bell peppers, drained and chopped

1 tablespoon minced garlic

1 teaspoon extra-virgin olive oil

1 tablespoon balsamic vinegar

1 cup light sour cream

1 tablespoon finely chopped fresh basil, or 1 teaspoon dried (see variations)

sea salt

freshly ground black pepper
