Ingredients

1/2 teaspoon active dry yeast

1/4 cup lukewarm water (105°- 115°)

About 1 1/2 cups unbleached all-purpose flour

1 large egg, beaten

2 tablespoons extra-virgin olive oil

1 1/2 pounds onions, thinly sliced

3 garlic cloves, thinly sliced

8 large plum tomatoes—4 peeled, seeded and chopped, 4 sliced crosswise 1/4 inch thick

Sea salt and freshly ground pepper

8 whole salt-packed anchovies (see Note), rinsed and filleted, or 16 oil-packed anchovy fillets, drained

20 Niçoise or Gaeta olives, halved and pitted

Basil leaves, torn
