kosher salt & freshly ground black pepper

1 tablespoon safflower oil or canola oil

8 tablespoons unsalted butter (1 stick)

4 large lemons, juiced

lemon halves (extra for serving)

4 tablespoons chopped parsley (passed separately)

2 cups corn, fresh cooked and off the cob or frozen defrosted and drained

1/4 cup red onion, finely diced

1 ripe avocado, diced

2 tablespoons roasted red peppers, drained and diced

1/3 cup olive oil

2 tablespoons red wine vinegar

1 small garlic clove, roughly chopped

1/4 teaspoon kosher salt

1/8 teaspoon freshly ground black pepper

pinch ground cumin (optional)
