3 small pears , halved and cored - put a piece of stem ginger in the core of each half

250.0ml milk

3 pieces stem ginger , chopped, plus 2 tbsp ginger syrup from the jar

2 eggs

200.0g unrefined dark brown sugar

1.0 tbsp golden syrup

200.0g butter , plus 2 tbsp melted butter for the tin

350.0g self-raising flour

1.0 tsp ground ginger

1.0 tbsp golden caster sugar
