1/2 cup red wine vinegar

2 ripe avocados

2 tablespoons brown sugar

1/2 cup brown sugar , firmly packed

24 large cooked prawns, peeled, roughly chopped

tomato jam, and

1/4 cup fish sauce

2 tablespoons vegetable oil

1 red onion , finely chopped


1 small red fresh chili pepper , finely minced

6 lettuce leaves , butter lettuce suggested

lime wedge , to serve

425 g chopped tomatoes

2 tablespoons grated gingerroot

Tomato Jam

2 tablespoons chopped coriander leaves

light sour cream

1/4 cup lime juice

1 tablespoon honey
