1 sheet nori, halved

2 cup 10 oz/300 g - sushi rice

1/2 inch English - hothouse, cucumber, halved lengthwise, seeded, then cut into strips

1/4 x 6 mm - thick

1/2 x fillet barbecued eel, cut into strips

1 x avocado, halved, pitted and peeled

4 tsp umeboshi - pickled plum, puree

Japanese soy sauce, for serving
