12 oz. soy “steak” strips

5 Tbs. cornstarch

1/4 cup low-sodium soy sauce

2 tsp. minced garlic

2 Tbs. sugar, or to taste

1 1/2 cups vegetable stock

2 tsp. sesame oil

2 tsp. minced ginger

2 Tbs. vegetable oil or more if needed

1 lb. asparagus, trimmed and cut into 2-inch lengths

3 dried red chiles, optional

Grated zest 1 large orange (about 2 Tbs.)

1 bunch scallions, trimmed and cut into 2-inch lengths
