I love this version, my only change is to remove the hocks or shanks at the end and add cubed ham, because I like the way it looks

I have made a bean soup often that's much like this recipe. The only difference is that I don't use the Italian seasoning, but I do add some ham base. I use chicken broth instead of water. And when the soup is almost done, I add some freshly mashed potatoes. That might sound odd I guess. But, I make them just for the soup and add the milk and butter to them. It's delicious, especially with some hot crusty bread.

Thanks, this is similar to mine--which I got from my Mom who got it from her mother in law. But, the name is wrong. Throughout the South, and in areas we would call "country" this is known as either "Hock Soup" or more frequently as "Beans". If you say either of these to someone from the South or the country, they know exactly what you're talking about--and they would NEVER use "herbs de provence" in it. Ingredients for 8 servings

1 lb of white beans - Cannellini or Great Northern - about 2 1/2 cups

2 quarts of water

2-3 lbs of ham hocks or shanks

2 teaspoons Herbes de Provence, or Italian seasoning

1 cup of diced onions (about 1 small onion)

1 cup chopped celery (about 2-3 ribs)

2/3 cup chopped carrots (about 1 medium carrot)

2-3 cloves garlic, diced

Tabasco sauce

Salt and pepper

Fresh parsley
