2 x leeks, washed thoroughly and diced

1 x clove minced garlic

1 tbsp olive oil

3 tbsp sweet butter

3 tbsp flour

8 cup homemade chicken stock or low-sodium canned stock

1 tsp dried thyme

1/4 cup cooking sherry

pinch of cayenne or to taste

1/2 lb lump crab meat

2 x scallions (green onions), julienned (optional)

Crème fraiche or sour cream (optional)
