Ingredients for 4 servings

2 boxes corn muffin mix (8 1/2 ounces each), such as Jiffy brand

2 eggs

4 tablespoons butter (1/2 stick), melted

1 1/2 cups whole milk

1 tablespoon extra virgin olive oil (EVOO) or vegetable oil

1 pound ground chicken

1 small yellow onion, finely chopped

1 medium zucchini, chopped

1/2 red bell pepper, chopped

1 jalapeño pepper, chopped

2 teaspoons ground cumin

1 teaspoon ground coriander

1 cup mild to medium taco sauce

Salt, to taste

2 1/2 cups shredded cheddar or Monterey Jack cheese (10 ounces)

2 small vine-ripe tomatoes, seeded and diced

2 tablespoons sliced green olives (salad olives), drained
