3 tablespoons white wine vinegar

3 tablespoons minced shallots

2 tablespoons fresh lemon juice

2 tablespoons minced fresh mint or tarragon, plus more to garnish

1/2 teaspoon kosher salt + more to taste

Freshly ground pepper to taste

1 cup nonfat plain yogurt

2 tablespoons olive oil

4 cups cooked boneless and skinless chicken, fat removed and cut into 1-inch pieces (about 1 pound boneless chicken)

8-10 dried apricots, cut into 1/4-inch pieces

1 avocado, diced

1/4 cup mayonnaise, or to taste
