  • 4 cloves garlic, minced
  • 1/4 cup frozen apple juice concentrate
  • 2 Tbsps plus 1 1/2 tsps Dijon mustard
  • 2 Tbsps extra-virgin olive oil, divided
  • 2 12-oz pork tenderloins, trimmed of fat
  • 2 Tbsps balsamic vinegar
  • 1 tsp crushed peppercorns
  • 3 Tbsps port, or brewed black tea
  • 1 Tbsp minced shallot
  • 1/4 tsp salt, or to taste
  • Freshly ground pepper, to taste
  • 2 Tbsps chopped fresh rosemary, or thyme
