Poached Eggs With Home Fries And Onion Tomato Spread

Ingredients for 4 servings

1 large onion

3 tbsps vegetable oil

6 new potatoes

8 large eggs

salt and pepper

cayenne pepper



2 tbsps tomato paste

2 tbsps vinegar



Wash your new potatoes. Place in saucepan and cover with cold water then put on medium-high heat.


Chop your onion into small pieces. Add 2 tablespoons of oil to a small pan on medium-high heat. Fried until golden. Add 2 tablespoons of tomato paste. you can substitute fresh tomato or crushed tomatoes but there's a lot of water in them and it will make a sauce instead of the spread. Remove from heat and stir in tomato paste until Incorporated. Cook till golden brown and spreadable.


Bring one cup of water to a simmer in a sauce pan on medium heat. Add 1 tablespoon of vinegar. Add a pinch of salt. Place eggs in gently. Poached eggs as desired. I like them soft. Just enough so the white doesn't jiggle.


By now the potatoes should be boiled. Run cold water over potatoes and chop into bite size pieces. In a medium frying pan heat 1 tbsp on medium high heat. Add potatoes, cayenne pepper, salt and pepper, and a pinch of nutmeg. Cook till golden brown and crisp.


For plating make a bed of potatoes then two poached eggs and to small spoonfuls of tomato and onion on top. Finish with a little doll for some flare. It's also delicious .
