1 large eggplant, cut into 1/4 round slices (unpeeled)

8 x mini-sweet orange peppers (or 4 orange bell peppers)

2 large yellow zucchini (green zucchini will do too)

1 cup fresh mozzarella

1/2 cup Goya canned chickpeas

1/2 tsp dried oregano

1/4 tsp red pepper flakes

1/2 tsp garlic powder

Salt & pepper

1/4 cup Balsamic vinegar

1/4 cup olive oil, divided

1.5 tsp Dijon mustard

2 tsp brown sugar
