Ingredients for 21 servings

1 stick (1/2 cup) margarine, melted in microwave for 25 seconds or so

1 egg

2 bananas

1/2 cup + 2 tbsp plain unsweetened yogurt

1 tbsp vanilla

1/2 cup white sugar

1/4 cup brown sugar

2 cups all purpose flour

1 & 1/4 cup oatmeal (I used quick oats; don’t know whether this is an important distinction)

1 tsp baking soda

2 tsp baking powder

1/4 tsp salt

2 cups frozen raspberries (don’t skimp! These are what make the muffins awesome. More is better.)

A sprinkle of raw sugar for the top of each muffin (optional but tasty)

Preparation

1.

Preheat oven to 385°

2.

Mix all wet ingredients. I used a fork to mash the bananas up into small chunks

3.

Mix in dry ingredients once wet ingredients are completely combined

4.

Pour batter into muffin tin, sprinkle tops of each muffin with raw sugar

5.

Bake for about 20 minutes
